Our Oils

Ultra Premium Extra Virgin

We keep a rotating selection of about forty oils and vinegars in our shop. Remember, olives are fruit and olive oil is fruit juice. We only sell oil pressed in the current season from the highest quality olives. There are two olive harvests each year. Northern Hemisphere growers harvest in the Fall, while Southern Hemisphere growers harvest in the Spring. Our Ultra Premium extra virgin olive oils range from mild to robust intensity and are named for the single variety of olive from which they are crushed. Arbequina, Arbosana, Coratina, Hojiblanca, Koroneiki, Leccino, Picual, and Pendolino are some of the varieties we carry.

Flavored Oils:

Baklouti Green Chili Oil  -  From the Barbary Coast of North Africa, the Baklouti pepper is rare and unique to Tunisia. This fruity and spicy oil is made by combining 1 pound of organic extra virgin olive oil with 1.6 pounds of fresh, early whole green chilies. The two, and only two, ingredients are then crushed together, fusing the fresh green pepper with the olive oil. Baklouti adds a new and surprising dimension to all sorts of dishes: enchiladas, salsas, potatoes, eggs, etc. This is truly an artisan product.

Basil Olive Oil  -  Fresh, green and herbal, basil and olive oil are two integral ingredients in Mediterranean cooking. Perfect for caprese salad, marinara sauces, and pizzas. Made with Certified Ultra Premium extra virgin olive oil and blended in small batches with 100% natural, organic ingredients.

Blood Orange Fused Olive Oil  -  Whole Blood Oranges and fresh, ripe olives are crushed together to form this lovely citrus olive oil. It is exceedingly versatile and can be used on fish, shellfish, chicken, fruit and salads. It also makes great pancakes, cookies, and pound-cake. Enjoy it blended with our Cinnamon-Pear Balsamic for a lively vinaigrette.

Butter Olive Oil  -  This golden, creamy olive oil is naturally infused with the rich flavor of butter. Use this vegan oil as a butter substitute in baking or anywhere else you might use melted butter (think popcorn, seafood, bread, pasta, mashed potatoes, and rice). Made with certified Ultra Premium Extra Virgin Olive Oil and blended in small batches with herbs to give you a delicious, buttery taste without chemicals.

Cayenne Chili Olive Oil  -  Twelve pounds of fresh, whole, ripe cayenne chilies are crushed per gallon of Organic Chetoui Extra Virgin Olive Oil. The oil and chilies are steeped for two hours before decanting and filtering. The perfect oil for a touch of heat in your Asian, Middle Eastern, Cajun, or Tex-Mex cuisine. Pairs well with our Sicilian Lemon White Balsamic.

Chipotle Olive Oil  -  The smoky flavor of this chili-infused oil is great for marinating steaks and brushing on grilled chicken. Excellent for dipping artisan breads, finishing soups (especially lentil!) and a wonderful base for dressings. Try pairing with our Raspberry Balsamic or Ripe Peach White Balsamic.

Eureka Lemon Fused Olive Oil  -  Our Eureka Lemon olive oil is produced by pressing whole, fresh lemons together with late harvest olives at the time of crush (Agrumato method). Its light, refreshing flavor is perfect for sauteing shrimp or scallops, or to drizzle on chicken or fish, or to toss on roasted broccoli. Citrus oil is also great on salads, in marinades and for baking.

Garlic Olive Oil  -  This is a versatile oil that gives off the flavor of pungent, fresh garlic. Delicious mixed in pasta or mashed potatoes or drizzle over steaks before grilling. Great for dipping bread or brushing on pizza!

Harissa Hot Olive Oil  -  Most popular condiment in North Africa and the Middle East, Harissa is made with smoked chili peppers, garlic, caraway, coriander and cumin, which are combined into a paste. Now that fantastic, complex flavor is infused with out Ultra Premium Olive Oil. Try this deliciously spicy oil with fried potatoes, eggs, or hummus.

Herbes de Provence Olive Oil  -  Top notes of savory, thyme and bay leaf, this oil is a winner. Try it drizzled over grilled chicken, or rub it on a turkey before roasting. It also makes excellent roasted potatoes and carrots. It pairs well with our Lavender Balsamic, Fig Balsamic, or Sicilian Lemon White Balsamic.

Persian Lime Olive Oil  -  Zesty Persian Lime is married with extra virgin olive oil for an unbelievably fresh, fragrant burst of citrus. This infused oil will take your recipes to the next flavor dimension. Try it in a marinade with garlic or a dressing with our Blackberry-Ginger Balsamic. It makes a delicious cilantro-lime rice!

Tuscan Herb Olive Oil  -  Best Selling Olive Oil! A delicious blend of oregano, rosemary, marjoram, and garlic. So versatile you will want to use it on everything. Sprinkle with grated Parmigiano Reggiano and a few twists of black pepper for an irresistible bread dipper or pasta.

Wild Anithos (Fernleaf) Dill Olive Oil  -  Highly aromatic and vibrant, our savory Wild Anithos Dill olive oil is a Mediterranean staple. We recommend using it with cucumbers, chopped salads, drizzled over spinach, fish, green beans, chicken, deviled eggs (or all egg dishes, really!) and potato salad. Use it to make your own aioli or tartar sauce. It pairs beautifully with our Sicilian Lemon White Balsamic.

Specialty Oils:

Bergamot Fused Olive Oil  -  Made with fresh Bergamot citrus fruit picked at its peak and crushed with certified organic early harvest Chetoui olives using 100% cold extraction methods. This wonderfully floral fused citrus oil pairs perfectly with seafood, especially scallops and shrimp. It's marvelous in dressings drizzled over arugula and spinach or sauteed vegetables.

Black Truffle Olive Oil  -  The late fall, early winter truffle is used to make this savory oil. A "tea method" is utilized, which steeps the ripe truffles for an extended period of time in olive oil. The closely guarded, proprietary process yields our heady, complex Black Truffle Oil. No extracts or chemicals are used in its production. It is fantastic in cream based soups, risotto, or drizzled over mashed potatoes. Try Black Truffle Parmesan fries! A few drops go a long way with this amazing oil.

Japanese Roasted Sesame Oil  -  This delicious oil may be the best tasting sesame oil we've ever had. The dark toasted sesames are roasted slow and low, and then pressed in small batches. It has tremendous depth of flavor and is one of the most fragrant oils in the world! Try this in all of your fusion and oriental cooking.
