Prosciutto Melon Salad with Balsamic

Adapted slightly from Epicurious

  • 12 wedges of 1/4 inch thick, seeded and peeled assorted melon (Honeydew, Cantaloupe, Watermelon)
  • 4 thin slices Prosciutto (optional)
  • 1 cucumber, washed and very thinly sliced
  • 2 Tbsp. Traditional Balsamic Condimento
  • 2 Tbsp. fresh basil or mint, minced

Toss it all together and chill it for about 30 minutes. Eat right out of the bowl.
